Doing up some Sockeye Salmon this afternoon.

Salmon ready for brine...




Brine consisted of sea salt, Kraken rum, and dark brown sugar in water. Brined for 2 hours.


Post brine...




It's now out of the brine, dried, and waiting for the pellicle to form.


And true to form, my daughter just called to say she's stopping by after work tonight. No one told her I was smoking fish. She just knew...

Brined in a combination of Kraken rum, sea salt, lime juice, espresso balsamic vinegar, and dark brown sugar dissolved in water. Smoked with Alder wood at 200 for 2 hours.


Finished salmon...





Sauteed some white eggplant, mushrooms, zucchini, and white onion in a mix of bacon drippings and butter, and sprinkled a little Parmesan cheese on it.
