Cold-smoking weather

Nice and chilly, but not so cold it'll freeze the meat, or cheese. So, I have a couple of projects to start tomorrow.

First...Six point something pounds of cured pork belly waiting to be cold-smoked into green-chili bacon tomorrow.








And after lunch, I'll be stopping by the local Costco to find some cheese to smoke.

And I'm still losing weight, though it has slowed down. 83 pounds so far. Portion control, exercise, and eating less carbs. You can still eat good and lose weight. Just eat less of the good stuff, and get enough exercise.

Test-fryage...





Vacu-paks of spiced coffee rubbed pork belly, curing for a smoke session in ten or twelve days...

Miner, I would bet that since you are using those vac. bags that the herbs and stuff are being sucked into the meat a lot better.

The spiced coffee pork belly I started curing awhile back will get rubbed with instant coffee and smoked tomorrow over cherry wood.


The unsmoked belly...












The recipe - all weights are percentages of the weight of the pork belly being cured.

Dry-rubbed, vacuum packed and cured for ten days



Spiced Coffee bacon


3% kosher salt
2% sugar
1% espresso powder
.5 % cinnamon
.5% cardamom
.5% ginger
.5% pepper
.25% nutmeg
.25% cure#1


Might also smoke some cheese. I also need to start another batch of beef jerky, and I'm smoking something on Saturday for a party on Sunday celebrating some friends closing on their house.

Cold smoked over cherry wood for ten hours...





Fried up a couple of strips. Flavor is coffee/chai, and quite good. Wife approves, so this one goes in the finished recipe file.
