Green chile day.

Breakfast was Omelettes filled with sharp cheddar cheese and Hatch chiles. Lunch was grilled ham and cheese sandwiches topped with Hatch chiles, and dinner is ribeye steaks brined in sea salt, garlic and Hatch chiles, then basted with Maker's Mark bourbon and butter.

Sounds perfect to me.   Today I'm making a big pot of my world famous green chili and then later we'll have smothered burritos and some homemade guacamole for dinner. 
I'm visiting Nebraska (my daughter lives here)  so I'm showing the locals how we make real green chili in Colorado.

Large, long, green chiles which come in just about all heat levels, and are grown in the vicinity of Hatch, NM. The soil there imparts a unique flavor to the chiles.

Crap I long for some extra hot Hatch green chiles. I lived in Farmington NM for almost 9 years and every year a semi would bring up a load and sell them by the pound or sack (50lbs) and roast'em on the spot for ya.
