New recipe for me.



It pita'd!

Recipe...

Pita Bread

Ingredients

375g AP flour

240g 104° water

2 tsp instant yeast

1 tbsp olive oil

1 tbsp sugar

1 tsp salt

Directions

Mix dry ingredients in mixer bowl.

Put in water and oil and mix to just combine

Set aside for 15 minutes

Mix to thoroughly combine and knead for 7 minutes.

Form into ball and place in oiled bowl.

Cover and raise until doubled in size.

Flour bench and turn dough out.

De-gas dough.

Divide into 8 pieces

Form each piece into a ball.

Cover with towel ands rest for 10 minutes

Roll out each ball into 6-inch circle.

Place on parchment lined pan.

Cover with towel and raise for 30 minutes



I cook mine on a smoking hot comal for tortillas. Surface temp is 575-590 degrees.

A cast iron frying pan is just as good - USE NO OIL!



Put each circle on the pan for about 30 seconds, then flip it over.

Cook it on the other side until it swells up.

Flip it back to the first side to swell up again.

Remove it to a rack to cool.

Always wondered how they did that!!!!!!
All you need now is the Gyros meat and sauce and some copped onions and tomatoes!
