Here is a roughly 10-lb. fresh ham I picked up from a friend's farm last week. I'm splitting it into thirds. One third is getting smoked tomorrow, one third is getting cured for cottage bacon. The last third am doing - something else with. Don't know what yet. Any suggestions?
