Dixie Gun Works sells a rough wood grip for the M1860 that is slightly oversize. It has to be sanded down and finished but might be ideal for your purposes:

Ted, the gun got put back in the cigar box pending my getting some grip frame/ trigger guard screws. The ones I have are pretty chewed up, plus I need the black powder arbor screw. Also need a decent mainspring or modify the one I have. I will be getting it out again soon though.
