Hybrid back ribs.

Did four racks of baby back ribs using multiple cook methods.

Step one - Rub ribs, vacuum pack and into the reefer overnight (night before last).

Step two - Fire up smoker with a mix of oak and maple and smoke ribs at low temp (130 degrees) for 2-1/2 hours. Re-vacuum pack, chill, and back into the reefer till the next day (yesterday morning).

Step three - Set up Anova immersion bath at 165 degrees. Put in vacuum packs of ribs and cook for a little over eight hours.

Step four - Unpack ribs, pat racks dry. Put on thin layer of sauce, then caramelize sauce with MAPP torch.


Final ribs...







While I was fetching the camera, someone stole some pieces off the one rack.
