Started a little over 2 pounds of wild caught Alaskan salmon curing for cold smoking, probably on Tuesday. Decorating the house. Might go make a pot of tea and throw some more wood on the fire.

E.Miner....how long are you smoking before covering and finish cooking? On my Traeger, about 2 hours is max before turning the skin or outer layer of meat into leather.

No.

It is cured. Then it is cold smoked for two to three hours with heavy smoke. Then it gets vacuum packed until needed on crackers or bagels.

I would have had a hard time moving a new woman in on the same property with my ex.  *6'  I had a dog before but she was a country dog used to going where she wanted, when she wanted. She couldn't do that here so I left her with my ex.

Thanks, she is a beautiful dog, well mannered and playful. I just can't turn her loose outside because the husky curiosity will lead her who knows where.

Just set a batch of cured maple-pepper bacon to drying to be smoked in the morning. Also smoking a couple kinds of cheddar cheese and some cheese curds.

Productive morning so far...

Bacon, cheddar cheese and cheese curds are in the smoker. Coffee is made. Bacon is frying.

Have to wait here today. FedEx is supposed to be delivering my Redhawk back to me, and it requires a signature.
